What you will need:

  • Pumpkin 750g
  • Roasted duck meat 600g
  • Glutinous rice flour 520g
  • Salt 6g
  • Hong Kong flour 120g
  • Chicken stock 300g
  • Sugar 56g
  • Sesame oil 4g
  • White pepper powder 2g
  • Black pepper 10g
  • Garlic 10g
  • Potato starch 12g

For the Dough:

  • Peel the pumpkin 600g, remove the seeds, cut into large pieces, and put it all in a large bowl.
  • Cover the bowl with plastic wrap and steam it for 30 minutes. This will create the puree
  • Add 40g sugar to the puree. Stir it and add both glutinous rice flour and Hong Kong flour. Mix well.

For the stuffing: 

  • Use roasted duck meat and 150g of peeled pumpkin, cut in the same way as it was for the dough.
  • Put the oil in the wok and fry garlic and black pepper, then add in roasted duck meat and pumpkin, white pepper powder and chicken stock.  After boiling, seasoning it with salt.  Put the potato starch which will make all of the ingredients bind together.
  • Let it cool
  • Take 25g of dough and 15g of stuffing wrapper and craft it into a pumpkin shape.
  • Fry it in 150 degree oil and serve hot.
