The man behind Artisan Smoke House, The Mattar Farm, will join The BBQ Steak-Out as guest chef.
Hattem is a self-taught student of the kitchen. Having grown up in his mother’s kitchen, Hattem first picked up a knife and put on an apron cooking for himself, while away at university. Every year his mother would fine-tune his skills and ingredients, while he created new dishes and new flavours on his own.
After winning a local BBQ competition in Dubai, Hattem took time away from his oil & gas job, and apprenticed and toured the US’ South, learning how to make the best BBQ there is. Not content with just one way to cook, he did the same while working as a cowboy in Argentina and working in the desert in the south of Oman. Each of those countries and styles has influenced Hattem’s cooking, as did the foundation from his mother.
Now he does the same with his daughters Tamara and Hanna. Instilling in them an appreciation for the freedom and artistry of the kitchen down to the freshest ingredients, and the journey they take from seed to feed them.
