Francisco Mora Sarabia

Chef Francisco Mora Sarabia began his humble career as a cook in his native Spain after receiving his degree in Restaurant and Hotel Management at the Center of Tourism in Alicante. Starting out at Hotel de La Gavina as a Cold Station and quickly found his rhythm there before eventually growing out of La Gavin and into La Finca – Elche, a Michelin Starred Restaurant.

After working at La Finca for a couple of years and strengthening his technic in Spanish cuisine, he eventually returned to the 5 Star Hotel, La Gavina where he had originally gotten his start. Now armed with Years of Fine Dining and Spanish Cuisines he was able to drive the menu to new heights with the introduction of new dishes, service style and back-of-house management skills.

Chef Francisco was then offered a chance to spearhead bringing authentic Spanish food and flavors to Abu Dhabi with Diablitos. Here at Diablitos he’s been on the forefront of signature items such as Tapas, Paellas, various desserts and “Mediteranian Flare” Pizzas.
